Dinner For 1

For the past few nights I’ve been enjoying dinner alone. My parents went away for a few days and I’ve enjoyed cooking for myself. It has been nice to have dinner parties for myself, and just be my own company.

On Monday, I had steak, potatoes, and spinach. Pan seared steak is just so delicious.

Tonight I had crock pot chicken and I made my GF matzo stuffing again. So delicious! http://mymidlifekitchen.com/recipe/crock-pot-red-wine-chicken/

Cooking for myself has been such an act of self-care. Sometimes just celebrating you with healthy foods is such a lovely thing.
